Tuscan Tomato Salad
Ingredients:
6 tomatoes
1 garlic clove
2 tbsp capers
1 bulb red onion
150 g olives
8 tbsp olive oil
2 tbsp red wine vinegar
1 ciabatta
1 bunch basil
Method
- Mix in a big bowl the tomato pieces, the minced garlic, the onion sliced into semi-circles, the capers and olives. Add oil and vinegar and mix gently. Do not spare spices.
- Break the ciabatta into smaller pieces and roast them sprinkled with a little olive oil on a grill or in an oven till golden crust appear. Add the croutons to the salad, mix thoroughly. Sprinkle chopped basil leaves on the top.
